3 small zucchini (1 lb.)
2 teaspoons olive oil
parmesan cheese (substitute non dairy cheese for dairy free)
- Preheat oven to 350 F
- Cut zucchini into eighths lengthwise.
- Toss zucchini spears in olive oil and arrange on baking sheet.
