- 1 lb. shrimp
- 1 container of Compari tomatoes (or less if you prefer) ~ cut into quarters or smaller
- 2 garlic cloves chopped
- feta cheese to taste
- fresh basil leaves to taste
- pine nuts to taste
- Saute garlic in olive oil with salt, pepper and shrimp.
- Throw in tomatoes and basil.
- When almost done mix in feta cheese and top with pine nuts.
- Serve over gluten free pasta or eat alone!
